The restaurant offers modern American fare with a focus on all-natural Certified Angus Beef and American Kobe cuts of beef cooked over mesquite wood. Other specialties include Slow-Poached Prime Rib cooked in its own juices for 12 hours; American Kobe Beef Short Ribs with Horseradish-Celeriac Puree and Red Wine Jus; and Salt-Grilled Maine Lobster with Truffled Pearl Pasta and Cippolini Onions.
Beverage Program
500 different selections are featured on the wine list at Bourbon Steak, focusing on top American producers, global Syrah as the next "Cabernet," as well as the best crus of Burgundy, Spain and Italy. An extensive collection of Champagne and global white wines also provide a lively introduction to the core of the list. The bar at Bourbon Steak centers on the classically engineered cocktail, using pure ingredients mixed with select hand-crafted spirits.
